🏔️ High-Altitude Baking Principles (5,000–6,000 ft)

Lower atmospheric pressure causes moisture to evaporate faster and leavening gases (baking powder, baking soda, and steam) to expand more violently, which can weaken cell structures and cause baked goods to collapse.

• Oven Temperature: Increase by 15°F to 25°F to set structural proteins before over-expansion occurs.
• Chemical Leavening: Reduce baking powder or baking soda by 15% to 25% to prevent crumb blowouts.
• Hydration & Sugar: Add 1 to 2 tablespoons extra liquid per cup of flour; reduce sugar slightly to avoid tenderizing gluten beyond stability.
